Watermelon Strawberry Shaved Ice

Ingredients
1/2 cup water
1/4 cup Fresh Thyme light agave nectar
3 sprigs fresh mint plus more for garnish
3 cups cubed watermelon
1 cup fresh strawberries, tops removed
1 Tbsp. white balsamic vinegar
Directions
  1. In a small saucepan, combine water, agave nectar, and mint. Bring mixture to a boil. Reduce heat and simmer for 5 minutes. Remove from heat and cool slightly. Discard mint sprigs.  ","In a blender, combine water mixture, watermelon, strawberries, and vinegar. Cover and blend until smooth.
  2. Pour into a 13x9x2-inch baking pan. Freeze for 30 minutes. Scrape across the surface with a fork to break apart ice crystals. Return to freezer. Repeat freezing and scraping every 30 minutes until all of the mixture is frozen.
  3. Serve garnished with fresh mint.
  4. Kiwi Shaved Ice: Bring 1 cup water, 1/4 cup Fresh Thyme light agave nectar, and 3 sprigs fresh thyme to a boil. Reduce and simmer 5 minutes. Cool slightly. Discard thyme sprigs. In a blender, combine 8 peeled kiwi, 1/2 cup fresh spinach leaves, and 1 Tbsp. fresh lime juice. Cover and blend until smooth. Continue with Step 3 above
