Ingredients
1 seedless cucumber
4 cups cantaloupe, honeydew, and/or watermelon, peeled, seeded, and chopped
1/4 small red onion, finely chopped
1 jalapeño pepper, seeded and finely chopped*
3 Tbsp. fresh orange juice
1 tsp. orange zest
2 Tbsp. fresh basil, thinly sliced
Fresh Thyme fine sea salt, to taste
Directions
  1. Use a spiralizer to cut cucumber into long, thin strips. Cut long strands in half, if needed, so they are easier to eat. Place in large bowl. Add chopped melon, red onion, and jalapeño.
  2. Add orange juice and orange zest. Stir gently to combine. Sprinkle with fresh basil. Season with salt, if desired.

*Note: Chile peppers contain volatile oils that can burn your skin and eyes. When working with jalapeños, wear protective gloves.
