Ingredients
Fresh Thyme olive oil cooking spray
1 (15 oz.) can organic pumpkin, divided
2 tsp. Fresh Thyme organic ground cinnamon, divided
1/3 cup Fresh Thyme organic maple syrup, plus additional for serving
2 Fresh Thyme large eggs, lightly beaten
½ cup Fresh Thyme 2% reduced-fat milk
1 tsp. Fresh Thyme organic vanilla extract
10 (1/2 inch) slices brioche bread
½ cup Fresh Thyme organic cane sugar
Directions
  1. Preheat oven to 375°F. Line a baking sheet with foil; spray with cooking spray and set aside.
  2. For dipping sauce, in a small bowl, whisk together ¾ cup pumpkin, 1 teaspoon cinnamon, and ⅓ cup maple syrup; set aside.
  3. In a large bowl, whisk together eggs, remaining 1 cup pumpkin, milk, and vanilla.
  4. Using a sharp knife, cut bread slices into thirds. Place a few breadsticks at a time into the egg mixture, coating well. Let excess egg mixture drip off, then arrange sticks on baking sheet. Bake for 20 to 25 minutes, turning halfway through baking.
  5. Meanwhile, in a small bowl, combine sugar and remaining 1 teaspoon cinnamon. Remove sticks from oven and lightly spray both sides with cooking spray. Sprinkle both sides with sugar mixture. Cool slightly on a wire rack.
  6. Serve toast sticks warm with dipping sauce and/or additional maple syrup.
